HAPPY NATIONAL AVOCADO DAY!
July 31st is National Avocado Day! I’m crazy about this creamy fruit, which is a staple in my home. I add it to salads, sandwiches, smoothies, salad dressings, spreads, etc., but my favorite is guacamole. Avocadoes possess a healthy dose of heart-healthy fats (monosaturated fatty acids), contains 20 vitamins (C, E, K, B6, niacin, riboflavin, folate, pantothenic acid, magnesium, potassium, beta-carotene, and omega-3 fatty acids). Health benefits of this superfood are many:
- Lowers cholesterol (protects the heart)
- Enhances vision
- Strengthens bones
- Prevents certain types of cancer
- Aids digestion, and
- Lessens depression
This year, National Avocado Day is just in time for the weekend, and I intend to indulge in my favorite classic guacamole recipe below. I hope you will give it a try.
Ingredients
4 Servings (1/4 cup each)
- 2 avocados (make sure they are ripe – soft to the touch)
- 2 tsp minced garlic
- 2 tbsp grated red onion
- ¼ cup diced cherry tomatoes
- ¼ cup chopped cilantro
- ½ tsp salt (sea salt)
- 1 lime juice
- ¼ tsp cayenne pepper (powder)
Instructions
Peel and remove the pits of two avocados. Mash to desired consistency (smooth or chunky).
Dice the tomatoes, mince the garlic, grate the onion, chop the cilantro, and stir into the mashed avocado.
Add the remaining ingredients (salt, lime juice, cayenne powder) to taste and enjoy with your favorite chips!
I intend to set a bowl of this amazing dish on my desk and enjoy while I outline book two of my trilogy. Hmm, with all the sitting at the laptop, I think I’ll need to add an extra mile to my run to burn off extra healthy calories. 🙂

Sometimes we just cut it in half, sprinkle sugar and eat it with a spoon.
